This Strawberry Upside Down Cake Recipe is so easy to make and also very very cheap!!! These items also go on sale frequently if you don't have them on hand already! This recipe cost me under $10 to make!!!! Below are more pics, but here is the list first -
Strawberries (you don't need a big contiainer only about 2 cups )
1 Package Strawberry Gelatin 3 oz any brand
3 Cups Mini Marshmallows
1 Package Cake mix I used Strawberry but Yellow, Lemon, or even Chocolate would work

This recipe is so easy you won't believe it!!! (color coded steps - if working with kids it helps)
1 Set your oven to 350 degrees
2 Spray your pan with cooking spray or use butter or margarine to coat (you don't need to use a bundt pan for this recipe )
3 Prepare your cake mix as Directed on the box
4 Next take about 2 Cups of strawberries and dice them up in a bowl. Use a fork or potato masher to lightly mash them a bit
5 Layer the strawberries on the bottom of your pan evenly
6 Next sprinkle the Gelatin evenly over the strawberries. I used one 3 oz box, but I have used 2 before for a firmer cake
7 Then evenly put the marshmallows over the top of the strawberries
8 Pour the cake mix you prepared evenly over the strawberries and Marshmallows (note you will see some bubbling as it fills in the air gaps and some marshmallows will rise to the top )
9 Bake the cake 1 hour for Bundt Pans or 45- 50 min for other pans (times may vary by oven so watch your cake). You will know it's done when you can insert a fork or toothpick into it and it comes back almost clean
10 Let the cake rest about 4 or 5 minutes preferably on a rack but oven top should work too

Next step is below
Invert your cake. It will still be hot, so I suggest using a dishtowel and placing a pan or plate over the hot pan, then grip plate and hot pan with the dishtowel and flip as one.
Tap the top of the pan before removing and then slowly remove

Last I took some of the left over strawberries and cut out a V and sliced them to look like hearts and put on the top
Serve with Whipped cream or ice cream or plain
If you don't like strawberries, you could use just about any fruit with a complementary gelatin. My daughter loves strawberry cake in this, but I prefer Yellow cake mix myself :)
