Being a mom of 3, not always easy but I love it!

Don't get me wrong I love being a mom.  Just sometimes it isn't the easiest job.  With 3 kids my husband and I are outnumbered finally so never a boring moment and when there is usually it means an  equally chaotic moment is coming next.  Pic on right is camping at Allegany State Park April 2013.  Trips to this great park are only possible by using the savings I get through coupons.

Daddy's Delight (also called Cheese with some noodles)

1 big can of tomatoes
1 lb or more if you like of Cheddar Cheese
1 big bag of thin flat noodles
1 lb ground round steak

boil the noodles. brown the meat. cut cheese in little pieces. mix it all together. put in large baking dish. bake at 350 til it looks done (lol). tastes great! very filling! Serves alot of people.

This is how my dad wrote up his recipe for our church cookbook :)

cottage beef bake
Iv made this for my children when they were younger instead of lasagna. easy for them to eat. now as adult they request it often.
1b elbows
1b grown beef
1 lg container cottage cheese
shredded mozzarella or other cheese ( Iv used them all)
parm cheese
jar sauce or homemade
seasonings
cook pasta , drain and set aside . cook ground beef with whatever seasonings you like. mix cottage cheese with half the shredded cheese and 1/4 or 1/2 cup parm cheese season as you like set aside. when beef is cooked add jar sauce and simmer for a few minutes.ok this is the fun part you can assemble yourself or let the kids help. this will be layered just like you would lasagna. In bottom of large baking dish splash some sauce , next noodles and then cottage cheese mix. keep layering ending with sauce. sprinkle some parm. cheese on top and bake for about 30 mins. 350 degrees. remove from oven and put remaining shredded cheese cook another 10 to 15 mins or until cheese is melted the way you like. just a note : you might have some extra pasta i always cooked a whole 1lb box cause my kids enjoyed eating the noodles as they layered plus half a lbs didnt seem enough. hope my direction are understandable Iv never share my recipe before and im not very good at putting words to it.

You won't believe it's low carb!!!

Ingredients:
1 large head of Cauliflower cut into bite size pieces (approx 6 cups)
6-8 strips of bacon cooked and crumbled (Cooked in oven at 400° for 20 mins)
6 Tbs chopped Chives
1/2 cup Mayonnaise
1/2 cup Sour Cream
2 cups Colby Jack Cheese ( may use cheddar)
8 oz container sliced mushrooms (I don't use mushrooms in mine)(optional)

Directions:
Preheat oven to 425°
In a large pot boil water and cook Cauliflower for 8 - 10 minutes, drain and let cool.
In a large bowl combine sour cream, mayo, 1/2 of crumbled bacon, 3 tbs chives, 1 cups of cheese,mushrooms and cauliflower and mix well... place in baking dish and cover with remaining 1 cup of cheese and rest of bacon crumbles. Bake for 15-20 minutes until cheese is melted. top with remaining 3 T chives and serve.
ENJOY!!!!

Baked Spaghetti (Taste of Home)

1 cup chopped onion
1 cup chopped green pepper
1 tablespoon butter
1 (28 ounce) can tomatoes with liquid, cut up
1 (4 ounce) can mushroom stems and pieces, drained
1 (2 1/4 ounce) can slices ripe olives, drained (optional)
2 teaspoons oregano
1 lb ground beef, browned and drained (optional)
12 ounces spaghetti, cooked and drained
2 cups shredded cheddar cheese
1 (10 3/4 ounce) can condensed cream of mushroom soup
1/4 cup water
1/4 cup grated parmesan cheese


In a large skillet, saute onion and green pepper in butter until tender.
Add tomatoes, mushrooms, olives, and oregano. Add ground beef if desired.

Simmer uncovered for 10 minutes.
Place 1/2 the spaghetti in a greased 13X9X2 baking dish. Top with half of the vegetable mixture. Sprinkle with 1 cup of cheddar cheese.
Repeat layers.

Mix the soup and water until smooth, pour over casserole. Sprinkle with parmesan cheese.
Bake uncovered at 350 for 30-35 minutes or until heated through.

I substituted cream of celery soup and omitted the mushrooms since I don't like them! I have made this so many times. It is so yummy! Pair it with a salad, bread and butter.

The best mac and cheese

2 cups uncooked elbow macaroni
4 tablespoons butter
2 1/2 cups grated sharp cheddar cheese
3 eggs (I omitted the eggs)
1/2 cup sour cream
1 (10 3/4 ounce) can condensed cheddar cheese soup
1/2 teaspoon salt
1 cup whole milk
1/2 teaspoon dry mustard
1/2 teaspoon black pepper

Boil the macaroni in water for six minutes. Drain.

In a medium saucepan, mix butter and cheese. Stir until the cheese melts.

In slow cooker, combine cheese mixture and add the eggs (I omitted the eggs), sour cream, soup, salt, milk, mustard and pepper. Add the drained macaroni and stir again.

Cook on low for 2 1/2 hours, stirring occasionally.

1/2 c Mayonaise 2 garlic cloves, 10 oz spinach squeeze dry as possible, 4 oz feta cheese. Stuff inside chicken breast (4) and wrap with bacon. Cook 375 for 40 min or until thermometer reaches 180

CHICKEN WING DIP::

We are making this recipe tomorrow for Kids' Choice Dinner and Movie Night during winter vacation!! I have pre-made this recipe before and just thrown it in the crockpot (using a crockpot liner I couponed for, of course). I have also frozen it, and it reheats beautifully. One year that we went to camp (and stayed in a cabin with electricity), I made a batch a few weeks ahead of time, froze it, and heated it in our crockpot while we were at the beach for the day...and it was all ready when we got back to the cabin!!

I will also note that I made this once using the Sargento Tasting Cheeses, since I had a bunch that I had couponed for and got for FREE. It didn't turn out that well. It's the only time it didn't turn out quite right, and the only difference was that I tried the different cheese. We will be making it tomorrow to use up some of the Adam's Reserve Cheddar that I got almost for free earlier this month at Tops. :)

-2 small chicken breasts (or 1 large), cooked & finely shredded
-1 12oz bottle Frank's red-hot sauce
-2 8oz pckgs cream cheese, softened
-1 16oz bottle bleu cheese dressing (we prefer Wegmans or Aldi brand b/c they are not as blue-cheesy flavored)
-16oz mont jack or cheddar cheese, shredded
-Tortilla chips (we prefer scoops)

To make shredded chicken:

Cover with water and bring to a boil. Boil 15-20 minutes. (shred exactly the same as if making BBQ pulled pork...except into extra small pieces).

1-Preheat oven to 350
2-In large bowl, mix shredded chicken and 8 oz (1/2) of cheese
3-In a saucepan over medium heat, combine cream cheese and bleu cheese and stir until smooth. Stir in bottle of hot sauce. Pour heated mixture into bowl with chicken mixture. Stir well.
4-Pour into greased baking pan. Top with 8 oz (1/2) cheese. Bake uncovered for 40 min.

HOMEMADE MACARONI & CHEESE::

Super simple recipe...I bring this to gatherings frequently...always a big hit!! I made this last weekend, using the Adam's Reserve Cheddar from the Tops deals earlier this month...it was amazing!!

1 box elbow macaroni, cooked (12 or 16 oz I think)
16oz cheddar cheese, shredded
milk (I use skim...my mother always used 2%)
5 tbsp. butter
salt/pepper to taste

Cook pasta according to directions, drain. In large bowl, stir together pasta, cheese, salt/pepper, and "some" milk.

Spray large baking dish (I've used a deep glass bowl or even a large metal brownie pan)

Poor mixture into pan. Add milk until only small pieces of macaroni are peeking through the top. Put 4-5 tbsp. of butter on top.

Bake at 350 for 45 minutes.

If it seems too "milky" after baking, let it sit for 10 minutes or so. Some of my family members prefer it to still be slightly "milky".

We make Pizza puffs :) Perfect for a party snack or just to sit around and munch :
1tbsp of italian seasoning ( or just Oregano)
pinch of salt
¾ cup flour
¾ tsp. baking powder
1 cup shredded cheese (we mix and match)
¾ cup of milk
1 egg, slightly beaten
¼ cup grated parmesan cheese
1 cup of pepperoni chopped or cubed
Pizza or spaghetti sauce
To bake;
Preheat oven to 375
Spray or grease a 24 count mini muffin tin.
In a large bowl, whisk baking powder, flour, italian seasoning and salt together.
Whisk in milk & eggs.
Stir in shredded cheese, parmesan and pepperoni.
Let it sit 5 minutes and stir.
Divide mix into muffin tins (about 1 heaping teaspoon each)
Bake 20 to 25 minutes until puffed up and golden brown.
